Simple Candy Potato Black Bean Quinoa Bowls with Crema


Description

Simple Candy Potato Black Bean Quinoa Bowls drizzled with a zesty Cilantro Lime Crema. This recent vegetarian meal is full of roasted candy potatoes, black beans, quinoa, roasted purple peppers and corn. 


Scale

Components

  • 2 candy potatoes, peeled and diced
  • 2 tablespoon olive oil
  • 1 teaspoon floor cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 cups of water
  • 1 cup dry quinoa
  • 1 cup low sodium black beans, drained and rinsed
  • 1 cup no salt candy corn, drained and rinsed
  • 2 roasted purple peppers, thinly sliced
  • 1/three cup purple onion, thinly sliced
  • non-obligatory: jalapeno, sliced
  • 2 avocado, sliced

Cilantro Crema:

  • 1/2 cup recent cilantro
  • 1/three cup plain greek yogurt
  • three tablespoon purple wine vinegar
  • 1 tablespoon lime juice
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon purple pepper flakes
  • 1/four teaspoon floor cumin
  • 1/four teaspoon smoked paprika
  • 1 garlic clove
  • salt & pepper to style

Directions

  1. Preheat oven to 400°F.
  2. In a small bowl, add olive oil, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt. Combine collectively.
  3. In a big bowl, add candy potatoes and the olive oil seasoning. Toss to coat the potatoes with the combination.
  4. Unfold the candy potatoes on a baking sheet in a single layer.
  5. Bake for 20 minutes. Take away and put aside.
  6. Within the meantime, rinse quinoa with water. Then add 2 cups of water and quinoa to a small sauce pan. Deliver to a boil. Then cowl and scale back to simmer for 15 minutes or till liquid is evaporated. Take away from warmth and fluff quinoa with a fork.
  7. To a small meals processor add recent cilantro, greek yogurt, purple wine vinegar, lime juice, olive oil, honey, dijon mustard, purple pepper flakes, floor cumin, smoked paprika, garlic clove, salt and a pepper to style. Mix till clean and cilantro is finely chopped.
  8. Assemble the Candy Potato Bowls. To a big bowl add quinoa, candy potatoes, black beans, roasted purple pepper, purple onion, avocado, corn after which drizzle with dressing. (non-obligatory sliced jalapenos)
